- 1 Kg Agria potatoes
- ½ cup mayonnaise (can substitute for plain greek yoghurt)
- ½ cup sour cream
- 3 gherkins, chopped in small cubes
- 1/4 red onion (finely diced)
- 3 spring onions, chopped finely
- 1 ½ teaspoons dijon mustard, or wholegrain mustard
- 2 hard boiled eggs, diced (optional)
- Fresh herbs of your choice for garnish (we're fans of parsley, chives or dill!)
- Salt & Pepper
- Peel and cut potatoes into cubes, 4x4 cms approx.
- Add potatoes to a large pot and cover with cold water.
- Bring water to a boil, add salt and reduce to a simmer.
- Cook until fork-tender then drain.
- In a large bowl combine the potatoes, gherkins, red onion, spring onions. Then add mayonnaise, mustard, vinegar, sour cream, PLUS salt and pepper! Mix carefully, without making a mash. If adding boiled eggs now is the time.
- Place on a serving dish, top up with fresh herbs and VOILA!
