Many consumers may be familiar only with white cauliflower because this is the most widely available type, but DID YOU KNOW back in the day, cauliflowers were naturally colourful! The predominant white colour that we now know is actually a result of crosses over many generations, to remove the colours and create just a white flower.
Like the different colours of capsicums, each colour of cauliflower has different characteristics, flavours, and health benefits. The colour pigments are naturally created by the plants:
- The orange pigment comes from carotene, which is found in carrots, and is a precursor of vitamin A.
- The purple pigment is from the powerful antioxidant anthocyanin family.
- And finally, green cauliflower owes its colour to the presence of chlorophyll which makes it sweet!
