  • 1 large purple kumara
  • 1/2 cup wheat flour
  • 1/2 teaspoon salt
  • A pinch of nutmeg
  • A pinch of black pepper

Instructions

  1. Cook the Kumara: Begin by cooking the purple kumara. You can microwave it for about 10-15 minutes until soft, or bake it in the oven for an hour. The microwave is quicker if you're short on time! Once cooked, mash the kumara in a bowl and let it cool completely.
  2. Prepare the Dough: When the mashed kumara has cooled, gradually add the flour. Be careful not to add too much, as this can make the gnocchi tough and rubbery. Add JUST enough flour so you can work with the dough without it sticking everywhere.
  3. Shape the Gnocchi: Divide the dough into two balls. Roll each ball into long strips and cut into half-inch pieces using a knife. You can then add a fun shape to your gnocchi with a fork.
  4. Cook the Gnocchi: Bring a pot of water to a boil. Add the gnocchi and cook for about 5 minutes. You'll know they're done when they float to the surface of the water.
