Just toss them in a flavourful mix of honey, olive oil, and spices, roast them until golden, and enjoy a delightful side dish that complements any main course. Whether you’re serving them with roasted meats or simply enjoying them on their own, these parsnips are sure to impress and satisfy!
Ingredients:
- 10 baby parsnips (unpeeled, just well scrubbed)
- 1 tbsp honey
- 1 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp ground cumin
Method:
- Preheat the oven to 220C/ (or 200C with fan). Line a baking tray with baking paper.
- Combine the honey, oil, paprika, coriander and cumin in a bowl. Set aside. Add the parsnips and toss to coat. Transfer to the prepared tray and roast for 25 minutes or until golden and cooked through.
