On the lookout for a fresh, light & easy to make dessert? Then this fat-free lime mousse is for you! Unlike most lime or lemon mousse recipes that rely on condensed milk and heavy cream, this version achieves an amazing mousse texture using Greek yogurt. This not only makes it lighter but also airier.

In just 20 minutes, you can prepare this mousse, and its texture is simply divine. It's full of bubbles and so light that it almost melts in your mouth.

p.s. no limes at home? Swap it out for lemons instead!

Ingredients:

  • 70g biscuits (we used ginger biscuits, but digestives also work)
  • 25g butter, melted
  • 2 egg whites
  • 80g white sugar
  • 200g Greek yogurt
  • Juice of 1 lime
  • Zest of 1 lime

Method:

  1. Prepare the Base:
    • Place the biscuits in a food processor and process until small crumbs form. Transfer to a medium-sized bowl.
    • Add the melted butter and mix well until combined.
    • Divide the mixture evenly into 4 small jars and press down with a spoon to create an even base.
  2. Make the Mousse:
    • In a bowl, combine the Greek yogurt, lime juice, and lime zest. Set aside.
    • In a large bowl, beat the egg whites and sugar with a hand mixer until stiff peaks form. Make sure you have no fat (butter, oil etc on your whisk or bowl before you start... the fat will stop the whites from whisking correctly!)
    • Gently fold the egg white mixture into the yogurt-lime mixture in two additions. Use a rubber spatula to cut down through the center and lift up from the bottom, turning the bowl as you go. Be careful not to overmix.
  3. Assemble and Chill:
    • Spoon the mousse mixture evenly into the jars over the biscuit base.
    • Place the lids on the jars and store in the fridge for at least 4 hours or overnight for best results.
