Ingredients:
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 2 tablespoons minced fresh tarragon
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon minced fresh parsley
Method:
- In a jar with a tight-fitting lid, combine the first 9 ingredients; shake well.
- Serve over salad greens.
- Keep in the fridge for up to 1 month.
