It’s a key herb in French cooking (it’s the essential ingredient in Béarnaise sauce), and is perfect alongside eggs, cheese and poultry. Combined with red wine vinegar, Dijon mustard, garlic, and fresh parsley, this dressing offers a tangy, aromatic experience that complements a variety of dishes. Ingredients:

  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 2 tablespoons minced fresh tarragon
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon minced fresh parsley

Method:

  1. In a jar with a tight-fitting lid, combine the first 9 ingredients; shake well.
  2. Serve over salad greens.
  3. Keep in the fridge for up to 1 month.
