You don’t need a lot of ingredients for a beautiful salad. You don’t even need lettuce! This simple salad is a refreshingly crisp and crunchy addition to any meal. Crisp fennel and celery create a light and crunchy texture, balanced with a zesty lemon and olive oil dressing that perfectly highlights the natural flavours of the vegetables. This salad is ideal as a refreshing side to hearty dishes or as a stand-alone bite of freshness in any meal. Garnished with fennel fronds and celery leaves, it’s as visually appealing as it is delicious. Perfect for adding a little brightness to your table!

Ingredients:

  • 1 large or 2 small fennel bulbs
  • 6 celery stalks
  • 3-4 tbsp good quality olive oil
  • 2 tbsp lemon juice
  • Salt & Pepper

Method:

  1. Very finely slice the fennel bulbs lengthways (a mandolin makes this easier).
  2. Cut the celery stalks into thin matchsticks.
  3. Place all ingredients into a large bowl.
  4. Drizzle over the olive oil and lemon juice, then season. Mix well, to make sure the dressing permeates the veggies.
  5. Scatter the top with chopped up fennel fronds and celery leaves for garnish!
