Made with a simple blend of honey, wholegrain mustard, and balsamic vinegar, this vinaigrette brings a perfect balance of sweet, tangy, and savoury flavours. Just whisk together the ingredients, add your favourite oil, and you have a delicious, homemade dressing that will keep in the fridge for weeks. Perfect for drizzling over fresh greens, roasted vegetables, or even using as a marinade for meats and tofu!

Ingredients:

  • 2 tablespoons honey
  • 1 tablespoon wholegrain mustard (can use Dijon too)
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon freshly crushed black pepper finely ground
  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil, or any oil in your pantry

Method:

  1. In a small mixing bowl, whisk together honey, balsamic, mustard, salt and pepper. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified (thicker).
  2. Store in a jar with a lid and refrigerate. Shake well before serving. Enjoy!
