Ingredients:
- 1 fennel bulb, cored and very thinly sliced
- 1 apple, very thinly sliced
- 1/2 red onion, thinly slices
- Zest and juice of 2 lemons
- 1 chilli, thinly sliced (can also use 1/2 tsp dried chilli flakes)
- Small handful of cilantro, finely chopped
- Salt and pepper to taste
- 3 Tbsp. extra-virgin olive oil
Method:
Toss fennel bulb, apple, lemon zest and juice, chilli, and cilantro in a large bowl; season salad with salt. Drizzle oil over and toss to coat.
This salad goes really well with roasted pork, fish, or simply by itself!
