Ingredients:
- 2 tsp soy sauce
- 2 cloves Garlic - finely chopped
- 1.5 tbsp rice vinegar or white vinegar
- 1 tbsp veggie oil (olive or rapeseed)
- 1 tbsp white sugar
- 1 tsp sesame oil
- Chilli flakes
- 2 spring onion (finely chopped)
- Sesame seeds & fresh coriander (for garnish)
Method:
- Place cucumber between two chopsticks. Make thin diagonal slices on the top. Then flip over and do the same on the other side. *Watch the video for proper instructions! *
- Transfer to a large bowl. Sprinkle salt over cucumbers and gently massage into them. Let cucumbers soak in salt for 5 mins. Rinse with cold water 3-4 times to completely remove the salt. Strain and set aside.
- Combine sauce ingredients in a separate bowl. Pour over the cucumbers, massage & mix. Enjoy!
